Yes, you can disable notifications for individual cameras. Here's how:
Log into the SimpliSafe app
Navigate to ☰ Menu > My System > Camera Settings > (your Garage camera)
Tap Motion Detection
Toggle the settings that you don't want to Off
The Motion Events setting controls whether or not you want to get recordings (and entries for events on your Timeline). And the Motion Notifications setting controls whether or not you get notified - which sounds like the setting you're looking for.
