You should receive a call from the monitoring center and you can cancel it then.
I've had to do this on a couple of occasions - once when my wife left a plastic cake pan in the oven and turned the oven on. The other was when I had the detector too close to the bathroom and the steam from the shower set it off. I received calls both times and cancelled them with no problem.
