Will the old door sensor and window sensor work, or do I need to buy all new components if I upgrade

If you're interested in the new SS3, and if you bought your SS2 before Jan 2018, call SS and request the 40% OFF upgrade offer on a new SS3 system - if a rep doesn't know what you're talking about, ask for a senior supervisor and request the offer.
